A charming and cosy establishment in the heart of the Talloires-Montmin mountain pastures, with views over Lake Annecy... A restaurant that reflects exactly who they are in its authenticity, simplicity and excellence, all driven by a passion for flavour

The owners of the establishment welcome you to share intensely pleasurable moments in an atmosphere that is as welcoming as it is elegant. They open wide the doors of their high-altitude home, inviting you to discover a seasonal cuisine that is creative, delicate and bursting with unexpected flavours. 

Florian is attuned to nature and endeavours to share this connection with you.

Experience alongside him the cycle of the four seasons which inspire him, give rhythm to his cooking and hone his technique, day in, day out. Spring, summer, autumn and winter…

Each season has its own flavours and fragrances, and each its own particular subtleties, which are all showcased in a Menu especially composed by Florian

Florian and Sandrine's commitment

Florian and Sandrine honour their deep love of nature in their day-to-day life and strive to ensure that both their work and lifestyle are consistent with these values.

A mentality that encourages them to avoid waste by taking only what is required; a style of cooking that respects seasonality and promotes proximity, and a way of being that, rather than imposing itself, evolvesin tune with nature.

The Auberge de Montmin has been awarded a green star by the Michelin guide.

Florian told by Sandrine 

For me, my husband impresses with his art. Over the course of the day, I never tire of observing his gestures, techniques and everything he gives to his passion. He is constantly creating, in a multitude of preparations, and is at the top of his game from five o’clock in the morning until the close of the evening service.

He has this creative genius, both visually and in terms of taste, and he expresses this intense sensitivity in the aesthetics and poetry of his cuisine.

He is constantly driven by a sense of rigour and a quest for perfection. He is passionate about his art and I can assure you, never stops cooking. It is his way of expressing his love and what he holds within him, both to our guests and to our family.

The expression “To cook is to love” takes on its full meaning with Florian.

He is in his element in the mountains that constantly inspire him to create and renew himself. They also give him space to breathe, especially on his long runs, which reinvigorate him to offer the very best of himself.

He is a true gourmet, which explains his cuisine that is bursting with flavour and robust and honest tastes. We are both particularly keen on vegetables, which explains their starring role in our menu.”

Sandrine told by Florian 

“Sandrine is really the heart and soul of the establishment. She truly loves people and does everything she can to make our guests feel at home. She throws her whole being into it.

She moves around the dining room like a graceful ballerina with an easy smile on her face, offering our guests an experience full of care, attention and sincerity.

She is passionate about everything I do in my day-to-day life and about my cuisine. She doesn't learn about it, she lives it, just as I do, so there can be no better ambassador than my wife. She doesn't explain the dishes to our guests, she recounts them like a story.
She is also passionate about fabrics, sewing and interiors. She likes soothing ambiances and has designed the restaurant interior to give our guests that cosy home from home feeling in our Maison de Cuisine.”

We call it a Maison de Cuisine because yes, this is our house, brought to life by our shared passion, cooking: a cuisine that is delicious, generous and to be enjoyed together.”
