Winter
Pristine mountains, silent alpine pastures as the herds are brought down to the valleys, and majestic forests cloaked in white shrouds.
In the deep mid-winter, the Auberge de Montmin takes on the feel of a cosy home from home in whose warmth and cheer everyone can happily gather.
It must be said that Florian and Sandrine have worked hard to make these long months so mouth-watering and delectable.
The fish and charcuterie have had time to dry and smoke.
And then there are all the seasonal products so loved by Florian.
Roots and leaves, cabbages of all kinds, squashes in every shape and form... All these winter vegetables, with their soft hues, form the inspiration for Florian's culinary creations. And to combat the cold outside, his sauces and jus are ever more rich and enveloping.
The aroma of long-simmering dishes gently wafts through the air.
The cheese is also an important guest at this comforting table.
However, Florian reworks this symbol of ancestral know-how in his own inimitable fashion, so that it offers up hitherto unimagined flavours.
And how about a delicious little chocolatey something to end on a high?
The fire crackles soothingly in the fireplace...
And time seems to stand still as if somehow urging us to experience it differently.
