In this month of March, the Auberge de Montmin reflects nature.

The peaks overlooking Lake Annecy are still covered in snow but the tell-tale signs of spring are everywhere. Buds and tender young shoots break through the melting snow; the water once again rushes down the mountain streams, and although the sun is still reticent, you sense that it is just biding its time.

Everything seems reborn.

As soon as the fine weather arrives, Florian and Sandrine are keen to fling open the doors and windows of their Maison de Cuisine to let in the fresh spring air and welcome their guests back onto the restaurant’s panoramic terrace.

Every year is the same: the pure unadulterated joy of springtime in Talloires-Montmin.

Florian looks forward to the unique crispness of the season’s early fruit and vegetables, and he delights in returning to the shady undergrowth of Montmin in search of the little white, wild garlic plant flowers.

Already he is conjuring up new tastes, subtly coloured creations and refined and delicate dishes. Like the cycles of nature, he renews his repertoire as if each time were the very first…
